  1. Preheat oven to 400F
  2. Combine all ingredients in large mixing bowl
  3. Drizzle with oil and vinegar
  4. Mix well by hand by folding ingredients together
  5. Form into meatballs to your desired liking (makes 18-20 1.5 inch diameter balls)
  6. Place packed balls into non-stick cupcake pans and back for 35-40 minutes
  7. Remove from oven and using a tong, gently release melted cheese from sides and twist each meatball lightly to free from pan and place on paper towel.
Recipe Notes

Serve with your favorite pasta and marinara! You can also freeze them for use later as I do when cooking for two. I like to spend the day in the kitchen on a day off and prepare food for the week.
